Horse gram¾ cup, soaked overnight
Mustard oil2 tbsp
Cumin seeds1 tsp, or jakhiya
Asafoetidaa pinch
Dried red chilli2
Garlic6 cloves, crushed
Ginger2.5 cm
Green chilli1
Onion1 small, chopped
Tomato1 medium, chopped
Turmeric (ground turmeric)¼ tsp
Coriander powder (ground coriander)2 tsp
Spinacha handful, chopped
Water3¼ cups

- 1Grind the soaked horse gram with ginger and green chilli into a coarse paste.
- 2Heat mustard oil, add jakhiya or cumin, asafoetida, red chillies and garlic, then onion until golden. Add tomato, turmeric and coriander powder.
- 3Add the paste and fry 3 minutes, then add water gradually, whisking out lumps. Add salt and spinach.
- 4Simmer on low for 35 to 40 minutes, stirring often, until thick and cooked.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
