Ingredients

Minced beef (beef mince, beef or buff keema)400 g
Onion1, finely chopped
Beef stock (beef broth)¾ cup + 2 tbsp
Maida (all-purpose flour, plain flour)160 g for pastry, 20 g for liquor
Beef suetshredded
Watercold, for pastry
Saltto taste
Puff pastryfor the lids
Potatofor mash
Butter30 g for mash, 20 g for liquor
Vegetable stock (vegetable broth)1⅔ cups, for liquor
Flat leaf parsleya big bunch, very finely chopped
Vinegarmalt vinegar

Method

6 steps
  1. 1Brown the mince with the onion, add the stock and simmer for 15 minutes until thick. Season and cool.
  2. 2Rub the suet into 160 g flour with a pinch of salt, add cold water and bring to a firm dough. Line six small pie tins.
  3. 3Fill with mince, top with puff pastry lids, crimp and bake at 200°C for 25 to 30 minutes.
  4. 4Boil and mash the potatoes with butter.
  5. 5Liquor: melt the butter, stir in the flour, whisk in the stock and simmer. Add the parsley and vinegar at the end.
  6. 6Serve the pie upside down beside the mash, smothered in liquor.
Serve it like this

Flip the pie onto the plate, spread the mash along one side with the back of a spoon and flood with liquor. Chilli vinegar on the table.
