Classic British Eve’s pudding.

Ingredients

6 servings
Apple4, peeled and sliced
Sugar⅔ cup, divided
Lemon juice2 tsp
Cinnamon powder½ tsp
Butter7 tbsp, soft
Egg2
Maida (all-purpose flour, plain flour)¾ cup plus 1 tbsp
Baking powder1 tsp
Milk2 tbsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp

Method

5 steps
  1. 1Heat the oven to 180 C. Toss the apples with 30 g sugar, lemon and cinnamon and spread in a buttered dish.
  2. 2Cream the butter and remaining sugar until fluffy. Beat in the eggs and vanilla.
  3. 3Fold in the maida, baking powder and milk.
  4. 4Spread the sponge over the apples, sealing to the edges.
  5. 5Bake 35 to 40 minutes.
Serve it like this

Spoon hot into bowls and pour over warm custard or add a scoop of vanilla ice cream.
