Ingredients

4 servings
Ripe plantain (ripe nendran banana)8 small ripe saba bananas or plantains
Rice flour½ cup
Maida (all-purpose flour, plain flour)½ cup
Sugar1 tbsp
Salta pinch
Baking powder½ tsp
Waterabout 1/2 cup
Cooking oil (vegetable oil)for deep frying, about 60 g absorbed

Method

4 steps
  1. 1Whisk the rice flour, maida, sugar, salt, baking powder and water into a smooth batter.
  2. 2Peel the bananas and slice lengthwise or press into fans.
  3. 3Dip in batter and fry at 175 C for 3 to 4 minutes until golden and crisp.
  4. 4Drain on a rack and serve warm.
Serve it like this

Serve hot on paper with a sprinkle of sugar, or with grated cheese and condensed milk the Jakarta way. Sweet tea alongside.
