Ingredients

6 servings
Pork700 g shoulder and some bone
Hominy2 cans, drained (or soaked dried hominy, cooked)
Dried guajillo chilli5
Dried ancho chilli1
Onion1, half for broth, half chopped
Garlic6 cloves
Dried oregano1 tbsp
Cumin powder (ground cumin)½ tsp
Bay leaf (indian bay leaf)2
Water8 cups
Saltto taste
Cabbage2 cups, finely shredded
Radish (daikon radish, mooli)6, thinly sliced
Lemon3 limes
Tortilla chipstostadas or chips

Method

5 steps
  1. 1Pressure cook the pork with half the onion, half the garlic, bay and salt in the water for 6 whistles. Let pressure release naturally.
  2. 2Soak the chillies in hot water, then blend with remaining garlic, cumin and a cup of broth. Strain.
  3. 3Shred the pork and return to the pot with the chilli purée and hominy. Simmer uncovered 25 minutes.
  4. 4Season with salt and half the oregano.
  5. 5Serve with bowls of cabbage, radish, chopped onion, oregano, lime and tostadas for everyone to add.
