Ingredients

4 servings
Idli dosa batter2 cups, a little sour
Rice flour¼ cup
Onion1 medium, finely chopped
Green chilli2, finely chopped
Ginger2.5 cm, grated
Cumin seeds½ tsp
Curry leaves1 sprig, chopped
Coriander leaves (cilantro)a little, chopped
Baking soda (bicarb soda, bicarbonate of soda)a pinch
Salt½ tsp, if the batter is unsalted
Cooking oil (vegetable oil)for deep frying, about 4 tbsp absorbed

Method

4 steps
  1. 1Mix the batter with rice flour, onion, green chilli, ginger, cumin, curry leaves, coriander, baking soda and salt.
  2. 2Heat oil in a kadai on medium heat and test with a drop of batter.
  3. 3Drop small balls of batter with your fingers or a spoon. Fry in batches, turning, until deep golden.
  4. 4Drain on paper and serve hot with ginger chutney or peanut chutney.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
