Ribbon sandwiches, Indian bakery style.

Ingredients
White bread12 sandwich slices
Butter3 tbsp, soft
Cream cheese½ cup
Beetroot (beet)1 small, boiled and finely grated
Carrot1 small, finely grated
Cheddar cheese⅓ cup, finely grated
Hung curd (greek yogurt)¼ cup
Mint leavesa handful
Coriander leaves (cilantro)a handful
Cucumber1 small, very thinly sliced
Lemon juice1 tsp
Salta pinch in each spread
Black peppera pinch
Method
4 steps
1Make the pink spread: mix half the cream cheese with the beetroot and a pinch of salt.
2Make the orange spread with the rest of the cream cheese, carrot and cheddar. Blend the hung curd with mint, coriander, lemon and salt for the green spread.
3Butter the slices. Stack four: pink, then orange, then green with cucumber, pressing each layer gently. Make three stacks.
4Wrap in a damp cloth and chill 15 minutes, then trim the crusts and cut each stack into three ribbons.
Serve it like this
Stand the ribbons on their sides in rows so the stripes face up, on a platter lined with lettuce.
