Ingredients

4 servings
Wheat noodles300 g thick alkaline noodles
Chinese sesame paste¼ cup
Sesame oil1 tbsp
Soy sauce2 tbsp
Dark soy sauce2 tsp
Chinkiang black vinegar2 tsp
Chinese chilli oil1½ tbsp
Zha caipickled radish or mustard, diced
Spring onion (green onion, scallion)chopped
Salta pinch

Method

4 steps
  1. 1Loosen sesame paste with sesame oil and a little warm water until pourable.
  2. 2Boil the noodles until just cooked, drain and toss with a little oil.
  3. 3Quickly dip the noodles in boiling water again to reheat, then drain well.
  4. 4Top with sesame sauce, soy, dark soy, vinegar, chilli oil, pickles and spring onion. Mix hard.
Serve it like this

Serve in a paper bowl or deep dish, sauce on top, mixed at the table, with soy milk alongside.
