Ingredients

4 servings
Potato4 small, boiled
Green beansa big handful, trimmed
Egg4
Tomato4 medium, in wedges
Tuna in oil (tinned tuna)2 tins, drained
Anchovy fillets4 anchovy fillets, optional
Black olivesa handful, Niçoise or Kalamata
Lettuce1 head, leaves torn
Onion1 small red onion, thinly sliced
Olive oil3 tbsp
Vinegar1 tbsp red wine vinegar
Prepared mustard1 tsp
Garlic1 small clove, grated
Saltto taste
Black peppera few grinds

Method

4 steps
  1. 1Boil the potatoes in salted water until tender. Blanch the beans 3 minutes, then plunge into cold water.
  2. 2Boil the eggs for 8 minutes, cool in cold water and peel.
  3. 3Whisk oil, vinegar, mustard, garlic, salt and pepper into a vinaigrette.
  4. 4Toss the warm potatoes in a little dressing. Arrange lettuce, potatoes, beans, tomatoes, onion, tuna, halved eggs and olives on a platter. Drizzle the rest.
Serve it like this

Arrange in sections on a wide platter so every colour shows, eggs halved on top, dressing drizzled just before serving. Crusty bread alongside.
