Sanshoku soboro don, a classic bento.

Ingredients

2 servings
Cooked rice3 cups, warm
Chicken mince (ground chicken)200 g
Soy sauce1½ tbsp
Sugar1½ tbsp, divided (or mirin)
Ginger1 tsp grated
Water2 tbsp
Egg3
Salta pinch
Cooking oil (vegetable oil)1 tsp
Green beansa handful, or snow peas

Method

4 steps
  1. 1Cook the chicken with soy, half the sugar, ginger and water, stirring with chopsticks into fine crumbs, until dry and cooked through.
  2. 2Beat the eggs with the remaining sugar and salt and cook in a lightly oiled pan, stirring with several chopsticks, into tiny fluffy crumbs.
  3. 3Blanch the beans and slice thinly on the diagonal.
  4. 4Pack rice into boxes and cover in three neat stripes of chicken, egg and beans.
Serve it like this
