Ingredients

4 servings
Potato4 large, in 1 cm batons
Cooking oil (vegetable oil)1 litre, for deep frying
Salt¾ tsp
Peanut butter⅓ cup
Thin coconut milk½ cup
Kecap manis2 tbsp
Garlic1 clove, grated
Fresh red chillies (fresh red chiles)½, minced
Brown sugar1 tsp
Lemon½ lime, juiced
Mayonnaise4 tbsp
Onion1 small, finely chopped

Method

  1. 1Soak the potato batons in cold water for 20 minutes. Drain and dry very well on a cloth.
  2. 2Fry in batches at 150°C on medium heat for 5 to 6 minutes. Drain and rest 10 minutes.
  3. 3For the satay, warm the peanut butter, coconut milk, kecap manis, garlic, chilli and sugar on low heat for 3 minutes, whisking. Stir in the lime.
  4. 4Raise the oil to 185°C on high heat. Fry the batons again for 2 to 3 minutes.
  5. 5Drain, toss with salt and pile into bowls. Spoon over the satay sauce and mayonnaise and scatter the raw onion.
Serve it like this

Pile the fries into a paper cone in a glass, spoon satay sauce down one side and mayonnaise down the other and finish with a heap of raw onion.
