Ingredients

3 servings
Cooked rice4 cups, cooked a day ahead and chilled
Schezwan sauce3 tbsp
Cooking oil (vegetable oil)2 tbsp
Garlic4 cloves, chopped
Ginger1.5 cm, chopped
Spring onion (green onion, scallion)2 stalks, whites and greens separated
Carrot1 small, diced
Green beans6 to 8, chopped
Cabbage1 cup, shredded
Capsicum (green capsicum, green bell pepper)½, diced
Soy sauce2 tsp
Vinegar1 tsp
Saltto taste

Method

5 steps
  1. 1Separate the cold rice grains with your fingers.
  2. 2Heat oil in a smoking wok. Add garlic, ginger and spring onion whites for 30 seconds.
  3. 3Add carrot and beans, then cabbage and capsicum. Toss on high heat for 2 minutes.
  4. 4Add the schezwan sauce and fry for 30 seconds.
  5. 5Add rice, soy sauce, vinegar and salt. Toss for 3 minutes, then add the spring onion greens.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
