Ingredients

Water1¼ cups, warm
Sugar3 tbsp
Fish sauce3 tbsp
Lemon juice¼ cup lime juice
Garlic3 cloves, minced
Fresh red chillies (fresh red chiles)2, sliced
Carrot1, thinly sliced
Raw papaya (green papaya)a small wedge, thinly sliced
Besan (chickpea flour, gram flour)1½ tbsp
Minced mutton (goat mince, ground goat)500 g
Onion1, grated and squeezed
Ginger garlic paste1½ tbsp
Green chilli2, minced
Garam masala1 tsp
Kashmiri chilli powder1 tsp
Saltto taste
Mint leavesa big bunch
Coriander leaves (cilantro)a big bunch
Cooking oil (vegetable oil)1 tbsp
Ghee2 tsp, melted
Rice noodles250 g thin rice vermicelli
Lettuce1 small head
Basil leavesa handful
Cucumber1, in batons

Method

6 steps
  1. 1Stir the sugar into the warm water until dissolved. Add the fish sauce, lime juice, garlic and chilli, then the carrot and papaya. Leave 20 minutes.
  2. 2Toast the besan in a dry pan on low heat for 2 minutes. Mix the mutton with the onion, ginger garlic paste, green chilli, garam masala, chilli powder, salt, besan and a handful each of chopped mint and coriander. Knead 3 minutes and chill 15 minutes.
  3. 3Wet your hands and press the mince onto skewers in long thin kebabs.
  4. 4Grill on a smoking grill pan brushed with oil on high heat for 8 to 10 minutes, turning, until charred and no pink remains inside. Baste with ghee.
  5. 5Cook the vermicelli in boiling water for 3 minutes, drain and rinse cold.
  6. 6Slide the kebabs off the skewers into bowls of the dip. Serve with noodles, lettuce, herbs and cucumber for dipping and wrapping.
