Ingredients
Papdi (flat fried crisps)24 flat puris
Potato2 medium, boiled and mashed
Onion1 small, finely chopped
Raw mango (green mango)a few pieces, finely chopped
Sev¾ cup fine sev
Mint leavesa handful, for green chutney
Coriander leaves (cilantro)a big handful, for green chutney
Green chilli2, for green chutney
Tamarinda lemon size ball, for sweet chutney
Jaggery3 tbsp, for sweet chutney
Dates4 or 5, seedless
Garlic3 cloves, for red chutney
Red chilli powder (indian red chili powder)1½ tsp, for red chutney
Chaat masala1 tsp
Lemon juice2 tsp
Saltto taste
Method
4 steps
1Make the chutneys. Blend mint, coriander, green chilli, a squeeze of lemon and salt with a little water. Simmer tamarind, jaggery and dates in a cup of water till soft, then blend and strain.
2Pound garlic with chilli powder, salt and a little water into a red chutney.
3Arrange papdi on a plate. Top each with potato, onion and mango.
4Drizzle the three chutneys, sprinkle chaat masala and lemon, then cover with sev.
Serve it like this
Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
