Besan (chickpea flour, gram flour)¾ cup
Onion2 medium, chopped
Garlic4 cloves, crushed
Green chilli2, chopped
Cooking oil (vegetable oil)3 tbsp
Mustard seeds1 tsp
Cumin seeds½ tsp
Asafoetidaa pinch
Turmeric (ground turmeric)½ tsp
Red chilli powder (indian red chili powder)1 tsp
Curry leaves1 sprig
Coriander leaves (cilantro)a handful, chopped

- 1Heat the oil. Add mustard seeds, cumin, asafoetida and curry leaves, then the garlic and green chilli.
- 2Add the onion and cook until soft and just turning pink. Stir in turmeric and chilli powder.
- 3Sprinkle in the besan a little at a time, stirring constantly. Season with salt.
- 4Sprinkle the water over in two goes, stir, cover and cook on low, stirring now and then.
- 5Uncover and stir until dry and crumbly. Finish with coriander.
