Maida (all-purpose flour, plain flour)3¼ cups
Rava (semolina)½ cup fine semolina
Water1½ cups
Instant dry yeast1½ tsp
Olive oil5 tbsp, divided
Salt2 tsp
Onion3 large, sliced
Tomato puree400 g passata
Anchovy fillets4 fillets
Processed cheese (american cheese)100 g caciocavallo or any firm cheese, diced
Breadcrumbs½ cup
Dried mixed herbs (italian seasoning)1 tsp dried oreganoMethod
- 1Mix flour, semolina, water, yeast, salt and 2 tbsp oil into a soft, sticky dough. Rise 2 hours.
- 2Cook onions slowly in oil until soft, add anchovies and passata, simmer 20 minutes.
- 3Press dough into an oiled tray, top with cheese cubes, then sauce, then crumbs, oregano and oil. Rest 30 minutes.
- 4Bake at 220C for 25 minutes until crumbs are golden.
