Shikampuri kebab.

Ingredients

6 servings
Minced mutton (goat mince, ground goat)500 g
Chana dal (split chickpeas)¼ cup, soaked 1 hour
Onion1 large: half sliced, half finely chopped
Ginger garlic paste1 tbsp
Dried red chilli2
Whole spicesbay leaf, cloves, cinnamon, cardamom
Water1 cup
Saltto taste
Egg1
Hung curd (greek yogurt)½ cup, for the filling
Mint leaves2 tbsp, chopped
Coriander leaves (cilantro)2 tbsp, chopped
Green chilli2, minced
Cooking oil (vegetable oil)for shallow frying

Method

5 steps
  1. 1Pressure cook mince, dal, sliced onion, ginger garlic, chillies, whole spices, salt and water for 2 whistles; let pressure release naturally.
  2. 2Dry out completely on high heat, remove whole spices, cool and grind smooth with the egg.
  3. 3Mix hung curd with chopped onion, mint, coriander, green chilli and a pinch of salt.
  4. 4Flatten a ball of mince, place a spoon of filling, close and flatten into a patty.
  5. 5Shallow fry on medium heat for 2 to 3 minutes a side.
Serve it like this

Halve one kebab to show the creamy centre, arrange the rest around it with onion rings and lemon. Serve hot.
