Ingredients

4 servings
Prawns (shrimp)400 g, peeled and deveined
Buttermilk⅔ cup
Maida (all-purpose flour, plain flour)½ cup
Maize flour (fine yellow cornmeal)⅓ cup cornmeal
Kashmiri chilli powder1½ tsp paprika or Cajun spice
Salt1 tsp
Cooking oil (vegetable oil)absorbed from frying
Mayonnaise¼ cup
Prepared mustard2 tsp
Lemona squeeze
Baguette (french bread roll)2 French bread loaves
Lettuceshredded
Tomatosliced
Dill pickles (gherkins)sliced

Method

4 steps
  1. 1Soak prawns in buttermilk for 10 minutes.
  2. 2Mix flour, cornmeal, spice and salt. Dredge prawns and fry in hot oil 2 to 3 minutes until golden.
  3. 3Mix mayo, mustard, lemon and a pinch of spice for remoulade.
  4. 4Split and warm the bread. Spread remoulade, add lettuce, tomato, pickles and pile on the prawns.
Serve it like this

Cut each loaf in half, wrap in paper and serve with hot sauce, lemon wedges and fries.
