Ingredients

6 servings
Arborio rice1¾ cups
Tomato puree400 g passata
Minced mutton (goat mince, ground goat)150 g mince, optional
Onion1 small
Olive oil1½ tbsp
Water3⅓ cups, hot
Parmesan½ cup
Mozzarella150 g, cut into sticks
Egg2
Breadcrumbs1¼ cups
Cooking oil (vegetable oil)for deep frying, about 6 tbsp absorbed
Saltto taste

Method

4 steps
  1. 1Cook onion and mince in oil, add passata, then rice and hot water bit by bit like risotto until cooked and thick.
  2. 2Stir in parmesan, spread on a tray and cool completely.
  3. 3Shape oval croquettes around a stick of mozzarella. Dip in beaten egg, then crumbs.
  4. 4Fry at 175C until deep golden.
Serve it like this

Serve hot, one or two per person, before pizza, with a napkin for the mozzarella strings.
