Sweet potato3 medium
Butter60 g for filling, 90 g for crust
Sugar¾ cup
Evaporated milk⅔ cup

Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Cinnamon powder¾ tsp
Nutmeg¼ tsp, grated

Maida (all-purpose flour, plain flour)1¼ cups, for crust
Water3 tbsp iced waterMethod
- 1Rub 90 g cold butter into the flour and salt, add iced water to form a dough, flatten and chill 30 minutes.
- 2Roast the sweet potatoes whole at 200°C until very soft, about 50 minutes, then peel.
- 3Mash the flesh with 60 g butter until silky, then beat in sugar, milk, eggs, vanilla and spices.
- 4Roll the dough into a 23 cm pie dish, pour in filling and bake at 180°C for 50 to 55 minutes.
- 5Cool completely before slicing.
