Ingredients

6 servings
Maize flour (fine yellow cornmeal)1 cup fine cornmeal
Maida (all-purpose flour, plain flour)½ cup
Baking powder1½ tsp
Sugar2 tsp
Salt¾ tsp
Red chilli powder (indian red chili powder)a pinch, as cayenne
Onion1 small, grated
Buttermilk¾ cup
Egg1
Cooking oil (vegetable oil)for deep frying (about 1/3 cup absorbed)

Method

4 steps
  1. 1Mix cornmeal, flour, baking powder, sugar, salt and cayenne.
  2. 2Add onion, buttermilk and egg; stir into a thick batter. Rest 10 minutes.
  3. 3Drop tablespoons into oil at 175 C. Fry 3 to 4 minutes, turning.
  4. 4Drain and salt lightly.
Serve it like this

Pile in a paper lined basket, hot, with honey butter or tartar sauce to dip. Perfect next to fried fish and slaw.
