Classic tahiri.

Ingredients
Basmati rice1½ cups, soaked 20 min
Potato1 large, cubed
Cauliflowersmall florets
Green peas¾ cup
Carrot1, cubed
Ghee2 tbsp
Cumin seeds1 tsp
Whole spicesbay leaf, cloves, cinnamon, cardamom
Onion1 medium, sliced
Ginger2.5 cm, grated
Green chilli2, slit
Turmeric (ground turmeric)½ tsp
Red chilli powder (indian red chili powder)½ tsp
Garam masala½ tsp
Water2½ cups
Saltto taste
Coriander leaves (cilantro)chopped
Method
4 steps
1Heat ghee in a cooker, add cumin and whole spices, then fry the onion until golden.
2Add ginger, green chilli and all the vegetables. Fry 3 minutes, then add turmeric, chilli powder and salt.
3Add the drained rice and stir gently for a minute. Add water and garam masala. Pressure cook 1 whistle on medium heat and let the pressure release naturally.
4Fluff gently and finish with coriander.
Serve it like this
Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
