Ingredients

Tomato8 medium
Besan (chickpea flour, gram flour)2 tbsp
Ginger garlic paste2 tsp
Red chilli powder (indian red chili powder)1½ tsp
Coriander powder (ground coriander)1½ tsp
Turmeric (ground turmeric)¼ tsp
Water1¼ cups
Cooking oil (vegetable oil)1½ tbsp
Cumin seeds½ tsp
Mustard seeds½ tsp
Dried red chilli2
Garlic4 cloves, sliced
Curry leaves2 sprigs
Coriander leaves (cilantro)a handful

Method

3 steps
  1. 1Boil tomatoes until soft, cool and blend. Strain.
  2. 2Whisk besan into the puree with ginger garlic paste, powders, water and salt. Simmer, stirring, until thick.
  3. 3Temper cumin, mustard, red chillies, garlic and curry leaves in oil and pour over.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
