Ingredients

8 servings
Almonds2½ cups, finely ground
Sugar1¼ cups
Egg5
Lemonzest of 1
Cinnamon½ tsp
Cooking oil (vegetable oil)for the tin

Method

4 steps
  1. 1Whisk eggs and sugar until pale and foamy.
  2. 2Fold in the ground almonds, zest and cinnamon.
  3. 3Pour into an oiled 24 cm tin and bake at 180 C until golden and set.
  4. 4Cool. Lay a cross of Saint James stencil on top and dust with icing sugar.
Serve it like this

Serve on a cake stand with the white cross visible, sliced into thin wedges. Coffee or sweet wine alongside.
