Maida (all-purpose flour, plain flour)2 cups
Curd (plain yogurt, natural yoghurt)¼ cup
Milk⅓ cup, warm
Watera little, warm
Baking powder1 tsp
Baking soda (bicarb soda, bicarbonate of soda)¼ tsp
Sugar1 tsp
Salt¾ tsp
Cooking oil (vegetable oil)2 tsp
Nigella seeds½ tsp
Coriander leaves (cilantro)a handful, chopped
Butter2 tbsp, to brushMethod
- 1Mix maida, baking powder, soda, sugar and salt. Add curd, milk and water and knead a soft dough. Rub with oil, cover and rest 2 hours.
- 2Divide into 8 balls. Roll each into a thick round, sprinkle nigella and coriander and press in.
- 3Cook on a medium hot tawa, topping side up, until bubbles form, then flip and cook the topped side.
- 4Brush with butter and serve hot.
Serve it like thisStack them in a cloth lined basket so they stay soft and warm, with a little ghee on top if you like.
