Ingredients

Butter⅔ cup, soft
Sugar¾ cup
Egg3
Maida (all-purpose flour, plain flour)1¾ cups
Baking powder2 tsp
Milk¼ cup
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Lemonzest and juice of 1/2
Apple4 medium, peeled, halved and cored
Salta pinch

Method

5 steps
  1. 1Score the rounded side of each apple half with fine parallel cuts and brush with lemon juice.
  2. 2Cream butter and sugar until pale, then beat in eggs one at a time with vanilla and lemon zest.
  3. 3Fold in flour, baking powder and salt alternately with milk. Spread in a lined 24 cm tin.
  4. 4Press apple halves, scored side up, lightly into the batter. Bake at 180 C.
  5. 5Cool 15 minutes, dust with icing sugar if you like and serve.
Serve it like this

Cut generous wedges, serve slightly warm with a cloud of softly whipped cream and a cup of coffee.
