Ingredients

Butter1 cup minus 2 tbsp, soft
Sugar1 cup caster, plus icing to dust
Egg4
Maida (all-purpose flour, plain flour)1⅔ cups
Baking powder2 tsp
Milk2 tbsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Jam (jam or jelly)raspberry or strawberry jam
Fresh cream (thickened cream, heavy cream)¾ cup plus 2 tbsp, whipped

Method

4 steps
  1. 1Beat butter and sugar until pale and fluffy, about 4 minutes.
  2. 2Beat in eggs one at a time, then fold in flour, baking powder, milk and vanilla.
  3. 3Divide between two lined 20 cm tins. Bake at 180 C for 22 to 25 minutes.
  4. 4Cool, spread one layer with jam and cream, top with the other. Dust with sugar.
Serve it like this

Place on a cake stand, dust with sugar and cut wedges at the table. Tea in china cups.
