Ingredients

8 servings
Maida (all-purpose flour, plain flour)2¾ cups
Baking powder4 tsp
Salta pinch
Butter6 tbsp, cold
Sugar3 tbsp
Milk¾ cup
Egg1, half in dough, half for glaze
Lemon juice1 tsp
Jam (jam or jelly)strawberry jam, to serve
Fresh cream (thickened cream, heavy cream)clotted or whipped cream, to serve

Method

4 steps
  1. 1Rub butter into flour, baking powder and salt; stir in sugar.
  2. 2Warm milk slightly, add lemon and half the beaten egg. Stir in quickly to a soft dough.
  3. 3Pat 3 cm thick, cut straight down without twisting. Glaze tops.
  4. 4Bake at 220 C for 10 to 12 minutes.
Serve it like this

Serve warm, split by hand, with bowls of jam and clotted cream, and a pot of tea.
