Ingredients

4 servings
Rice1½ cups
Lobia, dry (dried black eyed peas)¾ cup, soaked overnight
Baking soda (bicarb soda, bicarbonate of soda)½ tsp (stands in for kanwa)
Water5 cups
Saltto taste

Method

4 steps
  1. 1Boil the soaked beans with baking soda and water until just tender. Add dried waakye leaves now if you have them.
  2. 2Wash the rice and add to the beans with salt. Top up water to 1 inch above.
  3. 3Cover and cook on low until the water is absorbed.
  4. 4Rest 10 minutes, fluff and serve with the sides.
Serve it like this

Scoop onto a plate or banana leaf with a spoon of shito, boiled egg, fried plantain, a little spaghetti and gari on the side.
