Ingredients

4 servings
Ripe plantain (ripe nendran banana)3 very ripe plantains, cubed
Ginger5 cm piece, grated
Onion¼ onion, grated
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)½, minced
Whole spicesa pinch each of nutmeg and clove
Salt½ tsp
Cooking oil (vegetable oil)for frying (about 4 tbsp absorbed)
Peanutsroasted, to serve

Method

4 steps
  1. 1Pound or blend ginger, onion, chilli, spices and salt into a paste.
  2. 2Toss plantain cubes in the paste and marinate 15 minutes.
  3. 3Fry in hot oil in batches until deep golden.
  4. 4Drain and serve with roasted peanuts.
Serve it like this

Serve in a paper cone or bowl with a handful of roasted peanuts on top; eat hot with toothpicks.
