Ingredients

3 servings
Green chilli6 to 8 long green chillies, sliced on the slant
Pork belly250 g, thinly sliced
Garlic5 cloves, sliced
Fermented black beans1 tbsp, rinsed
Soy sauce1 tbsp
Dark soy sauce1 tsp
Cooking oil (vegetable oil)1 tbsp
Salta pinch

Method

4 steps
  1. 1Dry fry the chillies in a hot wok with no oil and a pinch of salt.
  2. 2Lift out the chillies. Add the oil and the pork slices and fry until the edges crisp.
  3. 3Add the garlic and black beans and fry 30 seconds.
  4. 4Return the chillies, add soy and dark soy, toss on high heat and serve.
Serve it like this

Serve straight from the wok onto a plate, chillies and pork tumbled together, with a big bowl of plain rice to cool things down.
