Ingredients

6 servings
Salmon200 g sashimi grade salmon, thinly sliced
Radish (daikon radish, mooli)1 white radish, finely shredded
Carrot2, finely shredded
Cucumber1, finely shredded
Pickled ginger¼ cup, shredded
Pomelo1 cup pomelo segments
Red bell pepper (red capsicum, red pepper)½, in fine strips
Lemon1 lime, juiced
Chinese plum sauce½ cup
Honey1 tbsp
Sesame oil1 tbsp
Chinese five spice powder½ tsp
White peppera pinch
Peanuts⅓ cup, roasted and crushed
Sesame seeds2 tbsp, toasted
Wonton wrappers10, cut in strips and fried crisp
Cooking oil (vegetable oil)for frying the crackers

Method

5 steps
  1. 1Fry the wonton strips in hot oil until golden and drain.
  2. 2Shred the radish, carrot and cucumber very fine and squeeze out excess water. Arrange in separate mounds around a big platter.
  3. 3Mix the plum sauce with honey for the dressing. Slice the salmon and keep it chilled until the last moment.
  4. 4At the table, add the salmon and squeeze over lime, then add pepper and five spice, oil, plum sauce, peanuts, sesame and crackers one by one, saying the matching wishes.
  5. 5Everyone tosses together, lifting the salad high and calling lo hei. Serve at once.
Serve it like this

Arrange each topping in coloured mounds around a large round platter with the salmon in the centre. Toss at the table with long chopsticks.
