Egg noodles300 g yi mein or long egg noodles
Dried shiitake mushrooms6, soaked and sliced
Button mushroom150 g, sliced
Bok choy (pak choi)4 small heads, halved
Spring onion (green onion, scallion)4, in long strips
Garlic3 cloves, minced
Gingera thumb, in thin strips
Oyster sauce2 tbsp
Soy sauce2 tbsp
Dark soy sauce2 tsp
Sugar1 tsp
Sesame oil2 tsp
Cooking oil (vegetable oil)2 tbspMethod
- 1Soak the shiitake in hot water 20 minutes. Slice and keep 1/2 cup of the soaking liquid.
- 2Cook the noodles until just tender, rinse briefly and drain. Do not cut them.
- 3Blanch the bok choy for 1 minute and arrange around a platter.
- 4Fry garlic, ginger and both mushrooms in the oil until browned. Add the soaking liquid, oyster sauce, both soys and sugar.
- 5Add the noodles and toss with tongs until they absorb the sauce. Finish with spring onions and sesame oil.
Serve it like thisPile the noodles high in the centre of a round platter with bok choy around the edge, served piping hot.
