Ingredients

2 servings
Water1¼ cups, for the dipping sauce
Kombua 5 cm piece
Bonito flakesa loose handful
Soy sauce3 tbsp plus 1 tsp
Sugar1 tbsp
Soba noodles2 bundles
Radish (daikon radish, mooli)a small piece, finely grated
Spring onion (green onion, scallion)1 stalk, finely sliced
Nori sheets1 sheet, in thin strips

Method

4 steps
  1. 1Make a small dashi with the water, kombu and bonito. Add soy and sugar, simmer 2 minutes, strain and chill.
  2. 2Cook the soba in plenty of boiling water, stirring at first, for the time on the pack.
  3. 3Drain and rinse under cold running water, rubbing gently, then plunge into ice water.
  4. 4Drain well and pile on a bamboo tray or plate. Top with nori. Serve the dip with radish and spring onion to stir in.
Serve it like this

Pile the cold noodles on a bamboo mat or plate with nori on top, the dip in a small cup, and radish and spring onion in tiny dishes alongside.
