Classic adhirasam.

Ingredients

10 servings
Rice1¼ cups raw rice, soaked 3 hours
Jaggery1 cup, grated
Water¼ cup
Cardamom½ tsp
Sesame seeds1 tsp
Ghee2 tsp
Cooking oil (vegetable oil)for deep frying, about this much absorbed

Method

4 steps
  1. 1Soak rice 3 hours, drain and spread on a cloth for 30 minutes. Grind to a fine, slightly damp flour and sift.
  2. 2Melt jaggery with water and boil to a soft ball stage.
  3. 3Stir flour into hot syrup with cardamom, sesame and ghee. Cover and rest at least 6 hours or overnight.
  4. 4Flatten small balls on greased plastic and fry on medium until brown both sides. Press between two ladles to remove oil.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
