Cooking oil (vegetable oil)1 tbsp
Cumin seeds½ tsp
Coriander seeds1 tsp, crushed
Onion1 small, chopped
Ginger1 tsp, grated
Green chilli2, chopped
Green peas¾ cup
Potato3 medium, boiled
Dry mango powder½ tsp
Garam masala½ tsp
Saltto taste
Coriander leaves (cilantro)a handful
Filo pastry (phyllo dough)10 sheets
Butter4 tbsp, melted
Hung curd (greek yogurt)⅔ cup
Mint leavesa handful, chopped

Method

5 steps
  1. 1Heat the oil on medium heat. Crackle the cumin and crushed coriander, add the onion for 4 minutes, then the ginger, chilli and peas for 3 minutes.
  2. 2Add the potatoes, roughly mash, and stir in the amchur, garam masala, salt and coriander. Cook 2 minutes on medium heat and cool.
  3. 3Cut each filo sheet in half. Brush with butter, put a line of filling along the short end, fold in the sides and roll into a tight cigar.
  4. 4Lay on a lined tray, brush with butter and bake in the oven at 200°C for 15 to 18 minutes.
  5. 5Mix the hung curd with the mint and a pinch of salt and serve with the hot borek.
Serve it like this

Stack the cigars in a criss cross pile like logs, with the mint dahi in a small bowl and a dusting of chaat masala over the top.
