Ingredients

4 servings
Spinach2 big bunches, washed and chopped
Potato2 large, cubed small
Cooking oil (vegetable oil)2 tbsp
Cumin seeds1 tsp
Onion1, finely chopped
Garlic4 cloves, chopped
Ginger2.5 cm, grated
Green chilli1 or 2, chopped
Tomato1, chopped
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)¾ tsp
Coriander powder (ground coriander)1½ tsp
Garam masala½ tsp
Saltto taste

Method

4 steps
  1. 1Heat the oil, crackle the cumin, then fry the potatoes with a pinch of salt and turmeric, covered, until nearly tender.
  2. 2Add onion, garlic, ginger and chilli and cook until the onion softens and the garlic smells golden.
  3. 3Add the tomato and powdered spices and cook until soft.
  4. 4Add the spinach in handfuls and stir until it wilts and its water dries off. Finish with garam masala and salt.
Serve it like this

Serve hot in a katori with phulkas or paratha, a bowl of dal and a spoon of pickle.
