Ingredients

4 servings
Whole wheat flour (wholemeal atta flour, chapati flour)2 cups, plus a little for dusting
Waterabout 2/3 cup, lukewarm
Salta pinch, optional
Ghee2 tsp, to brush, optional

Method

5 steps
  1. 1Knead the atta, salt and water into a soft dough, kneading 5 minutes. Cover and rest 20 minutes.
  2. 2Divide into 12 balls. Roll each thin and even, about 6 inches, dusting lightly.
  3. 3Cook on a hot tawa until small bubbles appear, flip and cook until light brown spots form.
  4. 4Lift with tongs and place the first side down directly on a medium flame. It puffs in seconds; turn once.
  5. 5Brush with ghee if you like and stack in a cloth lined box.
Serve it like this
