Ingredients

6 servings
Vine leaves (grape leaves)about 50 leaves, rinsed
Minced beef (beef mince, beef or buff keema)500 g (or half lamb)
Rice½ cup, rinsed
Onion2 medium, finely chopped
Tomato puree½ cup
Coriander leaves (cilantro)handful, chopped
Dill leavessmall handful, chopped
Mint leaves1 tbsp dried or a handful fresh
Red chilli powder (indian red chili powder)½ tsp
Black pepper½ tsp
Saltto taste
Butter2 tbsp
Waterabout 2 cups
Curd (plain yogurt, natural yoghurt)1¼ cups thick yoghurt
Garlic2 cloves, grated

Method

6 steps
  1. 1Blanch fresh vine leaves for 1 minute, or rinse brined ones well. Snip off stems.
  2. 2Mix mince, rice, onion, half the tomato puree, herbs, chilli, pepper and salt.
  3. 3Lay a leaf vein side up, put a heaped teaspoon of filling near the stem end, fold the sides in and roll up firmly but not too tightly.
  4. 4Line a pot with spare leaves and pack the tolma tightly seam side down. Add butter, remaining tomato puree and water, then weigh down with a plate.
  5. 5Cover and simmer on low until the rice is tender.
  6. 6Stir garlic and a pinch of salt into the yoghurt and serve with the tolma.
Serve it like this

Arrange the rolls in rows on a platter with a big bowl of garlic yoghurt on the side. Serve warm.
