Ingredients

2 servings
Fish2 pearl spot (karimeen) or pomfret, about 500 g whole, cleaned and scored
Kashmiri chilli powder1½ tbsp, divided
Black pepper1 tsp
Turmeric (ground turmeric)½ tsp
Lemon juice1 tbsp
Shallots12, sliced
Tomato1 medium
Ginger garlic paste1 tbsp
Green chilli2
Coriander powder (ground coriander)1½ tsp
Thick coconut milk⅓ cup
Coconut oil2 tbsp
Curry leaves3 sprigs
Saltto taste

Method

5 steps
  1. 1Marinate fish with half the chilli powder, pepper, turmeric, lemon and salt for 30 minutes.
  2. 2Shallow fry fish in half the coconut oil, 2 minutes per side.
  3. 3In remaining oil, fry shallots, ginger garlic paste, green chilli and curry leaves. Add tomato, coriander and remaining chilli and cook thick. Add coconut milk.
  4. 4Wilt banana leaves over a flame. Spread masala, lay fish, cover with more masala and fold into parcels.
  5. 5Cook parcels on a tawa on low, 8 minutes each side.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
