Ingredients

White maize meal (white cornmeal, maize meal)400 g corn dough or maize meal, fermented
Tapioca250 g fresh cassava, grated and fermented with the corn
Waterfor banku
Saltto taste
Okra (lady's finger)400 g, sliced
Fish400 g tilapia or smoked fish
Prawns (shrimp)200 g
Dried salted fisha little smoked or fermented fish (momoni)
Red palm oil4 tbsp
Tomato3, blended
Onion1, chopped
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)2
Stock cube (bouillon cube)1 cube

Method

4 steps
  1. 1Mix the fermented corn and cassava dough with water and salt into a smooth slurry.
  2. 2Cook over medium heat, stirring hard with a wooden paddle, until thick, smooth and stretchy, about 20 minutes.
  3. 3Fry onion in palm oil, add tomato, pepper, momoni and stock cube and cook 10 minutes. Add fish and prawns.
  4. 4Add okra and cook 5 minutes, stirring gently.
Serve it like this

Serve banku as smooth balls in a wide bowl with okro stew ladled around, fish and prawns on top.
