Ingredients
Basmati rice2¼ cups, washed
Chicken, curry cut (bone in chicken, small pieces)700 g, in pieces
Tomato4, chopped
Tomato puree¼ cup tomato paste
Onion2 large
Ginger5 cm piece
Garlic6 cloves
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1
Curry powder2 tsp
Dried thyme1 tsp
Bay leaf (indian bay leaf)2
Stock cube (bouillon cube)2 cubes
Cooking oil (vegetable oil)5 tbsp
Carrot1, diced
Green peas½ cup
Water2¾ cups chicken stock

Method
5 steps
1Blend half the onion with ginger, garlic and scotch bonnet. Rub a third over the chicken with salt and a cube; boil the chicken in 3 cups water 20 minutes. Keep the stock.
2Brown the chicken pieces in hot oil, then lift out.
3In the same oil fry the remaining onion, sliced, then the rest of the ginger garlic paste and tomato paste.
4Add the blended tomatoes, curry powder, thyme, bay and the other cube. Cook down until thick and oily.
5Stir in rice, carrot and peas, add stock to just cover. Cover tightly and steam on low. Return the chicken on top for the last 10 minutes.
Serve it like this
Serve on a large plate with the chicken on top, a spoon of shito, sliced boiled egg and a side of salad.
