Ingredients

Raw jackfruit (young green jackfruit)500 g tender raw jackfruit, or 2 tins young jackfruit in brine, drained

Cooking oil (vegetable oil)1½ tbsp

Onion1, thinly sliced

Garlic3 cloves, minced

Paprika2 tsp smoked paprika

Cumin powder (ground cumin)1 tsp

Barbecue sauce½ cup

Water½ cup

Cabbage2 cups, finely shredded

Carrot1, grated

Lemon juice1 tbsp

Prepared mustard2 tsp

Whole wheat burger bun (wholemeal bap)4 burger buns, toasted

Method

1If using fresh raw jackfruit, oil your hands and knife, cut it into chunks and boil in salted water until a fork slides in. Drain. Tinned jackfruit just needs rinsing.
2Cut away any hard core, then shred the jackfruit with two forks. Pick out large seeds.
3Fry the onion in oil until soft and golden, then add garlic, paprika and cumin for 30 seconds.
4Add the jackfruit, BBQ sauce, water and salt. Cook, stirring, until thick, then press it flat and let it catch for a few minutes.
5Toss the cabbage and carrot with lemon juice, mustard and a pinch of salt. Pile jackfruit onto toasted buns and top with slaw.

Serve it like this
