Fermented black beans2 tbsp, rinsed and roughly mashed

Soy sauce2 tbsp, divided

Cornflour (cornstarch)1½ tbsp, divided

Baking soda (bicarb soda, bicarbonate of soda)a pinch

Cooking oil (vegetable oil)3 tbsp

Garlic5 cloves, minced

Gingera thumb, minced

Fresh red chillies (fresh red chiles)1 to 2, sliced

Capsicum (green capsicum, green bell pepper)1 green pepper, in squares

Red bell pepper (red capsicum, red pepper)1, in squares

Onion1, in petals

Oyster sauce1 tbsp

Sugar1 tsp

Chicken stock (chicken broth)½ cup

Sesame oil1 tsp

Method

5 steps

1Toss the beef with 1 tbsp soy, 1 tbsp cornflour, the baking soda and 1 tbsp water. Rest 15 minutes.
2Mix the stock, oyster sauce, remaining soy, sugar and remaining cornflour in a cup.
3Sear the beef in 2 tbsp very hot oil in batches for 1 minute and lift out.
4Add the last oil, fry the black beans, garlic, ginger and chilli for 30 seconds, then the onion and peppers for 2 minutes.
5Return the beef, pour in the sauce and toss until thick and glossy. Finish with sesame oil.

Serve it like this

Spoon onto a warm plate in a glossy heap with the peppers on top. Steamed jasmine rice in bowls alongside.
