Ingredients

4 servings
Barnyard millet1 cup bhagar (samak rice)
Peanuts⅔ cup, roasted and finely ground
Ghee2 tbsp
Cumin seeds1½ tsp
Green chilli3, chopped
Kokum3 petals
Jaggery1 tbsp
Coriander leaves (cilantro)a handful
Saltrock salt, to taste
Water4½ cups

Method

5 steps
  1. 1Rinse the bhagar. Heat half the ghee, crackle half the cumin, add 1 chilli and the bhagar and roast 2 minutes.
  2. 2Add 2 1/2 cups hot water and salt, cover and cook on low until fluffy, 10 to 12 minutes.
  3. 3For the amti, heat the rest of the ghee, crackle cumin and the remaining chilli, then add ground peanuts and the rest of the water.
  4. 4Add kokum, jaggery and rock salt and simmer 8 minutes, stirring. Finish with coriander.
  5. 5Serve the bhagar with amti poured over.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
