Classic Bihari kebab.

Ingredients

4 servings
Mutton (goat meat)600 g boneless, in thin strips
Raw papaya (green papaya)2 tbsp paste
Curd (plain yogurt, natural yoghurt)½ cup
Onion1 large, fried crisp
Mustard oil3 tbsp
Ginger garlic paste2 tbsp
Poppy seeds (white poppy seeds)1 tbsp, ground
Kashmiri chilli powder1½ tsp
Garam masala1 tsp
Whole spicescardamom and cloves, ground
Saltto taste
Lemon1, in wedges

Method

4 steps
  1. 1Beat the mutton strips thin. Rub with papaya paste, ginger garlic paste and salt. Rest 2 hours.
  2. 2Grind the fried onion, poppy seeds and spices with curd into a paste. Mix with the meat and mustard oil. Marinate 4 hours or overnight.
  3. 3Thread the strips onto skewers, folding them like ribbons. Grill over hot coals or under a grill, turning, until charred and cooked through.
  4. 4For extra smoke, put the kebabs in a pot with a small bowl holding a hot coal, pour a little oil on the coal and cover for 5 minutes.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
