Beef400 g, very thinly sliced
Soy sauce3½ tbsp
Sugar1½ tbsp
Pear½, grated
Garlic6 cloves, minced
Sesame oil1 tbsp
Black peppera pinch
Sweet potato glass noodles (glass noodles, cellophane noodles)60 g, soaked
Button mushroom150 g, sliced
Napa cabbage (wombok, chinese leaf)a few leaves, cut
Onion1, sliced
Carrot1 small, sliced
Firm tofu150 g, sliced
Water3¼ cups
Spring onion (green onion, scallion)4 stalks, cut

Method

4 steps
  1. 1Marinate beef with soy, sugar, pear, garlic, sesame oil and pepper for 20 minutes.
  2. 2Arrange cabbage, onion, carrot, mushrooms and tofu around a wide pot, with beef in the centre.
  3. 3Pour in the water and simmer 10 minutes, stirring the beef to loosen.
  4. 4Add glass noodles and spring onion and cook 4 minutes. Check the beef is cooked through.
Serve it like this

Bring the wide pot to the table on a burner and serve into small bowls with rice and kimchi.
