Ingredients

4 servings
Maida (all-purpose flour, plain flour)1½ cups
Rice flour½ cup
Instant dry yeast1 tsp
Sugar2 tsp
Salt½ tsp
Waterabout 2 cups, lukewarm
Cooking oil (vegetable oil)for the pan

Method

3 steps
  1. 1Whisk flours, yeast, sugar, salt and water into a smooth, thin batter. Cover and leave overnight.
  2. 2Heat a flat pan on medium. Pour a ladle in the centre and spread in a spiral with the base of the ladle.
  3. 3Cook only on one side until the top is dry and the base light gold.
Serve it like this

Stack warm, drizzle with ghee and a sprinkle of sugar, or tear and serve with suqaar and sweet spiced tea.
