Ingredients

4 servings
Prawns (shrimp)400 g, cleaned
Raw mango (green mango)1 small, in strips
Fresh grated coconut1 cup
Kashmiri chilli powder1 tbsp
Turmeric (ground turmeric)½ tsp
Shallots6, sliced
Ginger2.5 cm, julienned
Green chilli2
Water1¼ cups
Coconut oil2 tbsp
Mustard seeds½ tsp
Fenugreek seeds¼ tsp
Curry leaves3 sprigs
Saltto taste

Method

4 steps
  1. 1Grind coconut with chilli powder and turmeric to a smooth paste.
  2. 2Simmer the paste with water, raw mango, ginger, green chilli and salt until the mango softens.
  3. 3Add prawns and cook just until they curl and turn pink.
  4. 4Temper mustard, fenugreek, shallots and curry leaves in coconut oil and pour over.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
