Ingredients

Chicken, curry cut (bone in chicken, small pieces)1 kg, bone in
Basmati rice2 cups, soaked
Onion2, chopped
Tomato2 large, chopped
Tomato puree3 tbsp
Garlic5 cloves
Carrot1, grated
Green chilli2
Dried lime1 dried lime
Baharat1 tbsp kabsa spice
Whole spicescinnamon, cardamom, cloves
Cooking oil (vegetable oil)3 tbsp
Almonds¼ cup, fried
Raisins¼ cup, fried
Saltto taste
Water4 cups

Method

5 steps
  1. 1Fry onions in oil until golden, add garlic, chilli and whole spices.
  2. 2Add the chicken and baharat and sear well.
  3. 3Add tomato, puree, carrot, loomi and water. Simmer until the chicken is cooked through.
  4. 4Remove chicken. Add rice and salt to the broth, boil, then cover and cook on low until tender.
  5. 5Grill or pan sear the chicken until golden and lay over the rice. Top with fried nuts and raisins.
Serve it like this

Spread rice on a large platter, chicken on top, scatter almonds and raisins. Serve with daqqus, green salad and laban.
